前    言
本标准根据《地理标志产品保护规定》与GB 17924—1999《原产地域产品通用要求》制定。
本标准代替GB 19048—2003《原产地域产品 龙口粉丝》。
本标准与GB 19048—2003相比主要变化如下:
----将标准由强制性改为推荐性。
----修订了与《地理标志产品保护规定》不一致的地方,将“原产地域”表述修订为“地理标志”。
----增加对食品添加剂的要求,并引用了GB 2760(见5.7)。
----删除4.2“断条率”术语,并修改了断条率计算公式,使其更加准确(见6.2.4)。
----修改了二氧化硫含量测试方法引用标准(见6.2.5)。
本标准的附录A为规范性附录。
本标准由全国原产地域产品标准化工作组提出并归口。
本标准起草单位:烟台市质量技术监督局。

地理标志产品  龙口粉丝
1. 范围
本标准规定了龙口粉丝的地理标志产品保护范围、术语和定义、要求、试验方法、 检验规则及标志、包装、运输、贮存。
本标准适用于国家质量监督检验检疫行政主管部门根据《地理标志产品保护规定》批准保护的地理标志产品龙口粉丝。
2. 规范性引用文件
下列文件中的条款通过本标准的引用而成为本标准的条款。凡是注日期的引用文件,其随后所有的修改单(不包括勘误的内容)或修订版均不适用于本标准,然而,鼓励根据本标准达成协议的各方研究是否可使用这些文件的最新版本。凡是不注日期的引用文件,其最新版本适用于本标准。

3. 地理标志产品保护范围
龙口粉丝的地理标志产品保护范围限于国家质量监督检验检疫行政主管部门根据《地理标志产品保护规定》批准的范围,见附录A。
4. 术语和定义   下列术语和定义适用于本标准。
4.1 龙口粉丝 Longkou vermicelli
在本标准第3章规定的范围内,以绿豆或豌豆为原料,利用当地水资源、地理环境、气候、和微生物体系,采用传统的工艺加工而成的粉丝。
5. 要求
5.1 原料
5.1.1 绿豆   符合GB/T 10462的规定。
5.1.2 豌豆   符合GB/T 10460的规定。
5.1.3 生产用水 选用本标准第3章规定范围内的水源,水质符合GB 5749的规定。
5.2 气候环境  地理标志产品保护范围属典型的暖温带大陆性季风区,半湿润,气候四季分明,风力适中,气温适宜,空气湿度较低,日照时间长,微生物体系独特,适合龙口粉丝生产。
5.3 传统工艺特点  龙口粉丝以绿豆或豌豆为原料,利用自然微生物体系,采用传统的酸浆发酵法独特工艺,提取高纯淀粉,然后经过打糊、漏粉、浸洗、晾晒或者烘干精致而成。
5.4 感官指标    
感官指标应符合表1的规定

5.5 理化指标    理化指标应符合表2 的规定。

5.6 卫生指标    按GB 2713执行。
5.7 食品添加剂
5.7.1 食品添加剂的使用应符合相应的标准和有关规定。
5.7.2 食品添加剂的品种和使用量应符合GB 2760的规定。
6 试验方法
6.1 感官指标
色泽、形态、杂质:在自然光下进行。
口感:龙口粉丝在沸水中煮5min后品尝。
6.2 理化指标
6.2.1淀粉    按GB/T 5009.9执行。
6.2.2 水分    按GB/T 5009.3执行。
6.2.3 丝径(直径)
从试样中随机抽取20根粉丝,截取300mm长度,用精度为0.02mm的游标卡尺分别测其直径,取平均值。其中单根粉丝随机测量5个点,其平均值为单根粉丝的直径。
6.2.4 断条率
截取50根长度为10cm的无机械损伤的粉丝,在1000mL烧杯中加水900mL,煮沸后放入粉丝并加盖表面皿,微沸煮45min后,滤去水分,用玻璃棒数其完整条数,按式(1)计算断条率。

式中:

           A-----断条率,%; x------煮后完整条数。  按上述方法试验三次,取其平均值。

6.2.5 二氧化硫残留量   按GB/T 5009.34执行。
6.2.6 灰分  按GB/T 5009.4执行。
6.3 卫生指标   按GB 2713 执行。
7. 检验规则
7.1组批     在同一条件下、同一生产周期下,用同一批原料生产的同一品种、同一规格的产品为一批。
7.2 抽样     每批从5个不同部位随机抽取样品,样品量不少于1kg。
7.3 出厂检验
7.3.1龙口粉丝出厂前应由生产厂逐批进行检验,合格并附合格证方可出厂。
7.3.2 出厂检验项目为感官指标、丝径、水分。
7.3.3 判定规则:检验时若有一项不合格,应加倍抽样,对不合格项目进行复检,仍不合格则判出厂检验不合格。
7.4 型式检验
7.4.1 型式检验项目
型式检验项目为本标准规定的全部要求。
正常生产每半年进行一次型式检验,有下列情况之一时,应进行型式检验:
a) 主要原料或工艺有重大改变时;
b) 停产半年恢复生产时;
c) 出现质量不稳定时;
d) 国家质量技术监督局部门提出型式检验要求时。
7.4.2 判定规则   感官要求、理化指标有一项不合格项时,应加倍抽样,如仍有不合格项,则判该批产品不合格。卫生指标有一项不合格,则判该批产品不合格。
8. 标志、包装、运输、贮存
8.1 标志   标签应符合GB 7718 的规定。不符合本标准的产品,其产品名称不得使用含有龙口粉丝(包括连续或断开)的名称,不得使用地理标志产品保护专用标志。
8.2 包装
8.2.1 内包装材料应符合相应卫生标准和有关规定。
8.2.2 外包装应确保产品不受损坏或污染。
8.3 运输   运输时应防雨、防潮,不得与有毒、有害、有异味或可能影响产品质量的物质混装运输。
8.4 贮存   应放在阴凉干燥的库房内,不准露天存放,库内不得存放有毒物质和腐蚀性物质。
